👨🍳 Instructions
- Rinse the glutinous rice thoroughly until the water runs clear, then soak it in cold water for at least 4 hours, or preferably overnight.
- Drain the soaked rice and steam it for 20-25 minutes until tender and translucent, then set aside to cool slightly.
- Meanwhile, prepare the coconut cream mixture for the rice: in a saucepan, combine 100g coconut milk, 25g sugar, and 0.625g salt; heat gently until the sugar and salt dissolve, do not boil.
- Pour the warm coconut cream mixture over the slightly cooled steamed rice, stir gently to combine, cover, and let it sit for at least 30 minutes to allow the rice to absorb the liquid.
- For the coconut sauce, combine the remaining 100g coconut milk, 25g sugar, and 0.625g salt in a small saucepan; heat gently until sugar and salt dissolve, then remove from heat.
- Peel and slice the ripe mango. To serve, scoop a portion of the sticky rice onto a plate, arrange mango slices next to it, and drizzle generously with the sweetened coconut sauce. Garnish with toasted sesame seeds.
