Aji de Fideos (Spicy Noodle Stew)

- Thin spaghetti (fideos) 50 g · 180 kcal
- Onion, chopped 50 g · 20 kcal

- Aji amarillo paste 11 g · 15 kcal
- Crushed tomatoes 37 g · 7 kcal
- Potatoes, diced 75 g · 60 kcal
- Carrots, diced 25 g · 10 kcal

- Beef broth 150 g · 10 kcal

- Ground cumin 1 g · 5 kcal

👨🍳 Instructions
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef stew meat in batches until sealed on all sides, then remove and set aside.
- Add the chopped onion to the pot and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic, ground cumin, and dried oregano, cooking for another minute until fragrant.
- Stir in the aji amarillo paste and crushed tomatoes, cooking for 2-3 minutes to allow flavors to meld. Return the browned beef to the pot.
- Add the diced potatoes and carrots, then pour in the beef broth. Bring to a simmer, cover, and cook for 20 minutes, or until the beef and vegetables are tender.
- Add the thin spaghetti (fideos) and green peas to the pot. Cook uncovered for another 8-10 minutes, stirring occasionally, until the pasta is al dente and the stew has thickened.
- Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh cilantro or parsley if desired.
