  1. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef stew meat in batches until sealed on all sides, then remove and set aside.
  2. Add the chopped onion to the pot and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic, ground cumin, and dried oregano, cooking for another minute until fragrant.
  3. Stir in the aji amarillo paste and crushed tomatoes, cooking for 2-3 minutes to allow flavors to meld. Return the browned beef to the pot.
  4. Add the diced potatoes and carrots, then pour in the beef broth. Bring to a simmer, cover, and cook for 20 minutes, or until the beef and vegetables are tender.
  5. Add the thin spaghetti (fideos) and green peas to the pot. Cook uncovered for another 8-10 minutes, stirring occasionally, until the pasta is al dente and the stew has thickened.
