👨🍳 Instructions
- Combine rice flour, finely chopped onion, green chili, grated ginger, chopped coriander leaves, and curry leaves in a large bowl. Add salt to taste.
- Gradually add hot water to the mixture, kneading until a soft, pliable dough is formed. Add a teaspoon of oil to the dough and knead again.
- Divide the dough into equal portions and flatten each portion between two sheets of parchment paper or plastic wrap, using your hands or a rolling pin, to form thin rotis.
- Heat a tawa (griddle) over medium heat and lightly grease it with oil. Carefully place a roti on the hot tawa.
- Cook for 1-2 minutes until small bubbles appear, then flip and cook the other side, drizzling a little oil around the edges. Press gently with a spatula to ensure even cooking.
- Once both sides are golden brown and cooked through, remove the Akki Roti from the tawa. Serve hot with coconut chutney, sambar, or any pickle of your choice.
