👨‍🍳 Instructions

  1. Combine rice flour, finely chopped onion, green chili, grated ginger, chopped coriander leaves, and curry leaves in a large bowl. Add salt to taste.
  2. Gradually add hot water to the mixture, kneading until a soft, pliable dough is formed. Add a teaspoon of oil to the dough and knead again.
  3. Divide the dough into equal portions and flatten each portion between two sheets of parchment paper or plastic wrap, using your hands or a rolling pin, to form thin rotis.
  4. Heat a tawa (griddle) over medium heat and lightly grease it with oil. Carefully place a roti on the hot tawa.
  5. Cook for 1-2 minutes until small bubbles appear, then flip and cook the other side, drizzling a little oil around the edges. Press gently with a spatula to ensure even cooking.
  6. Once both sides are golden brown and cooked through, remove the Akki Roti from the tawa. Serve hot with coconut chutney, sambar, or any pickle of your choice.
