👨‍🍳 Instructions

  1. In a large bowl, combine the ground lamb, finely chopped onion, parsley, diced tomato, a generous pinch of salt, black pepper, paprika, cumin, allspice, and chili flakes. Mix well until all ingredients are evenly distributed.
  2. Carefully slice each pita bread in half horizontally to create two pockets. Evenly spread the meat mixture inside each pita half, pressing it gently to form a thin layer.
  3. Preheat your grill or oven to medium-high heat (around 200°C/400°F). Brush the outside of the filled pitas generously with olive oil.
  4. Place the arayes on the hot grill or baking sheet. Cook for 10-15 minutes, flipping halfway, until the pita is golden brown and crispy, and the meat is thoroughly cooked.
  5. Once cooked, remove the arayes from the heat and let them rest for a couple of minutes. Cut each stuffed pita into wedges and serve immediately with a side of yogurt or tahini dip.
