👨🍳 Instructions
- Rinse the long-grain white rice thoroughly. Cook the rice according to package instructions, typically by combining 60g rice with 120ml water and a pinch of salt, bringing to a boil, then simmering until water is absorbed.
- Peel the ripe plantain and slice it diagonally into 1/2-inch thick pieces. Heat about 10g of vegetable oil in a frying pan over medium heat.
- Fry the plantain slices for 2-3 minutes per side until golden brown and tender. Remove them from the pan and set aside.
- In the same pan, add the remaining 10g of vegetable oil if needed. Crack the egg into the pan and fry it to your desired doneness, preferably with a runny yolk. Season with a pinch of salt.
- To assemble, place a portion of cooked rice on a plate. Arrange the fried plantain slices next to the rice and top the rice with the fried egg. Serve with a generous dollop of tomato sauce.
