👨‍🍳 Instructions

  1. Rinse the long-grain white rice thoroughly. Cook the rice according to package instructions, typically by combining 60g rice with 120ml water and a pinch of salt, bringing to a boil, then simmering until water is absorbed.
  2. Peel the ripe plantain and slice it diagonally into 1/2-inch thick pieces. Heat about 10g of vegetable oil in a frying pan over medium heat.
  3. Fry the plantain slices for 2-3 minutes per side until golden brown and tender. Remove them from the pan and set aside.
  4. In the same pan, add the remaining 10g of vegetable oil if needed. Crack the egg into the pan and fry it to your desired doneness, preferably with a runny yolk. Season with a pinch of salt.
  5. To assemble, place a portion of cooked rice on a plate. Arrange the fried plantain slices next to the rice and top the rice with the fried egg. Serve with a generous dollop of tomato sauce.
