👨🍳 Instructions
- Start by desalting the carne seca: rinse the meat thoroughly, then soak it in cold water for at least 12 hours, changing the water every 3-4 hours.
- After desalting, cook the carne seca in a pressure cooker with fresh water for about 45-60 minutes, or in a regular pot until tender; drain and shred the meat.
- In a large heavy-bottomed pan or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
- Add the minced garlic, diced bell pepper, and chopped tomatoes to the pan. Cook for another 5-10 minutes until the vegetables soften slightly.
- Stir in the shredded carne seca and uncooked rice, mixing well to combine all ingredients.
- Pour in enough hot water or beef broth to cover the rice by about one inch (2.5 cm). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the liquid is absorbed and the rice is cooked.
- Once cooked, fluff the rice with a fork. Garnish with fresh chopped parsley before serving.
