  1. Whisk the egg with a pinch of salt and pepper; heat 1 tsp vegetable oil in a wok or large skillet over medium-high heat. Scramble the egg until just set, then remove and set aside.
  2. Add the remaining vegetable oil to the wok. Stir-fry the diced chicken until cooked through and lightly browned, then remove and set aside with the egg.
  3. Add grated ginger, minced garlic, and diced red bell pepper (if using) to the wok. Stir-fry for 1-2 minutes until fragrant.
  4. Add the day-old cooked rice to the wok, breaking up any clumps. Stir-fry for 3-5 minutes, ensuring the rice heats through and gets slightly crispy.
  5. Return the cooked chicken and scrambled egg to the wok. Pour in the soy sauce and sesame oil, then stir well to combine all ingredients.
  6. Finally, add the sliced green onions and stir-fry for another minute. Serve hot, optionally garnished with fresh cilantro.
