Arroz Chaufa (Peruvian Fried Rice)

- Cooked white rice, day-old 150 g · 195 kcal
- Chicken breast, diced 75 g · 124 kcal
- Large egg 45 g · 70 kcal
- Green onions (scallions), sliced 12 g · 4 kcal
- Fresh ginger, grated 4 g · 3 kcal
- Garlic, minced 3 g · 4 kcal

👨🍳 Instructions
- Whisk the egg with a pinch of salt and pepper; heat 1 tsp vegetable oil in a wok or large skillet over medium-high heat. Scramble the egg until just set, then remove and set aside.
- Add the remaining vegetable oil to the wok. Stir-fry the diced chicken until cooked through and lightly browned, then remove and set aside with the egg.
- Add grated ginger, minced garlic, and diced red bell pepper (if using) to the wok. Stir-fry for 1-2 minutes until fragrant.
- Add the day-old cooked rice to the wok, breaking up any clumps. Stir-fry for 3-5 minutes, ensuring the rice heats through and gets slightly crispy.
- Return the cooked chicken and scrambled egg to the wok. Pour in the soy sauce and sesame oil, then stir well to combine all ingredients.
- Finally, add the sliced green onions and stir-fry for another minute. Serve hot, optionally garnished with fresh cilantro.
