👨🍳 Instructions
- Prepare asparagus: snap off woody ends, cut tips (about 2-3 cm) and set aside; thinly slice remaining stalks.
- In a saucepan, bring vegetable broth to a simmer and keep it warm over low heat.
- In a large, heavy-bottomed pan, heat olive oil over medium heat. Sauté finely chopped shallot until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Add Arborio rice to the pan and toast for 1-2 minutes, stirring constantly until the edges become translucent.
- Pour in white wine and stir until it is completely absorbed by the rice.
- Add the sliced asparagus stalks to the rice and cook for 2 minutes.
- Begin adding the warm broth, one ladleful at a time, stirring continuously until each addition is absorbed before adding the next. This process should take about 15-20 minutes.
- About 5 minutes before the risotto is done (when the rice is almost al dente), add the reserved asparagus tips to the pan.
- Once the rice is creamy and al dente, remove the pan from the heat. Stir in butter and grated Parmesan cheese until fully melted and combined; season with salt and freshly ground black pepper to taste.
- Let the risotto rest for 2-3 minutes, then serve immediately.
