👨🍳 Instructions
- Rinse Basmati rice thoroughly until water runs clear, then soak in salted water for at least 30 minutes, or up to several hours.
- Bring a large pot of water to a boil, drain the soaked rice, and add it to the boiling water; cook for 5-7 minutes until al dente.
- Drain the rice in a colander and immediately rinse with cold water to stop cooking; set aside.
- In a heavy-bottomed non-stick pot, heat the vegetable oil over medium heat. Arrange a thin layer of par-cooked rice at the bottom for the tahdig.
- Layer the remaining par-cooked rice with fresh dill and shelled fava beans, creating alternating layers.
- Make a few holes in the rice layers with the handle of a spoon to allow steam to escape, then cover the pot with a lid wrapped in a clean kitchen towel.
- Cook on medium-low heat for 10 minutes, then reduce heat to low and cook for another 45-50 minutes, allowing the rice to steam and the tahdig to form.
- Once cooked, remove from heat and let rest for 10 minutes before gently fluffing with a fork and serving.
