👨🍳 Instructions
- If using dried black-eyed peas, rinse well and cook until tender, then drain and set aside. Cook the long-grain white rice according to package instructions until fluffy.
- In a large pot or deep skillet, heat the olive oil over medium heat. Add the cubed bacon and cook until crispy, then remove with a slotted spoon and set aside, leaving the rendered fat in the pan.
- Add the chopped onion, garlic, and green bell pepper to the pan with the bacon fat. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the cooked black-eyed peas and cooked rice with the sautéed vegetables. Season with salt to taste and mix well to combine all ingredients.
- In a separate small pan, heat a little olive oil. Cut the queijo coalho into cubes and pan-fry until golden brown and slightly crispy on all sides.
- Return the crispy bacon to the pot with the rice and beans. Add the pan-fried cheese cubes and chopped cilantro and chives. Gently stir to combine.
- Serve Baiao de Dois warm, garnished with extra fresh cilantro or green onions if desired.
