👨‍🍳 Instructions

  1. Rinse the fine bulgur and soak it in cold water for 15-20 minutes, then drain thoroughly, squeezing out any excess water. Set aside.
  2. For the filling, heat a tablespoon of olive oil in a pan, sauté 100g finely chopped onion until softened, then add 300g ground meat and cook until browned, breaking it apart. Stir in pine nuts, allspice, cinnamon, black pepper, and cumin. Cook for another 2-3 minutes.
  3. In a food processor, combine the soaked bulgur, remaining 500g ground meat, 100g onion, and a pinch of allspice, cinnamon, black pepper, and cumin. Process until a smooth, paste-like mixture forms, adding a little cold water if needed.
  4. Preheat your oven to 190°C (375°F). Lightly grease a 9x13 inch baking dish with olive oil. Press half of the bulgur-meat mixture evenly into the bottom of the prepared dish, smoothing it with wet hands.
  5. Spread the cooked meat and pine nut filling evenly over the first layer of the bulgur-meat mixture. Then, carefully spread the remaining bulgur-meat mixture over the filling, sealing the edges well.
  6. Score the top layer into diamond shapes using a sharp knife, then drizzle with the remaining olive oil. Bake for 30-35 minutes, or until golden brown and cooked through. Serve warm.
