Baked Vegan Ziti

👨🍳 Instructions
- Preheat your oven to 190°C (375°F). Lightly grease a 9x13 inch baking dish.
- Cook the ziti pasta according to package directions until al dente; drain and set aside.
- For the marinara sauce, heat olive oil in a large pot over medium heat, then sauté diced onion until softened, about 5-7 minutes.
- Add minced garlic, dried basil, and dried oregano; cook for 1 minute until fragrant. Pour in the crushed tomatoes, stir well, and simmer for 15-20 minutes, allowing the flavors to meld.
- Meanwhile, prepare the vegan ricotta: in a food processor, combine pressed tofu, nutritional yeast, lemon juice, garlic powder, onion powder, a pinch of salt and pepper. Process until smooth and creamy.
- In a large bowl, combine the cooked ziti with about two-thirds of the marinara sauce, ensuring the pasta is well coated.
- Spread half of the sauced ziti into the prepared baking dish. Top with half of the vegan ricotta, spreading it evenly.
- Repeat with the remaining ziti and ricotta. Pour the reserved marinara sauce over the top layer and sprinkle generously with vegan mozzarella shreds.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the edges are golden brown. If desired, broil for 1-2 minutes for extra browning.
- Remove from oven and let rest for 5-10 minutes before serving. Garnish with fresh basil before serving.
