Baked Ziti with Seafood

👨🍳 Instructions
- Cook ziti pasta according to package directions until al dente; drain and set aside. Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.
- Add minced garlic, dried oregano, and red pepper flakes (if using); cook for 1 minute until fragrant. Pour in white wine and simmer until reduced by half.
- Stir in crushed tomatoes and tomato paste, bring to a simmer, then reduce heat and cook for 15-20 minutes, allowing flavors to meld. Season with salt to taste.
- Gently fold in shrimp and scallops into the sauce; cook for just 2-3 minutes until seafood is barely opaque. Remove from heat immediately to prevent overcooking.
- In a large bowl, combine the cooked ziti, the seafood marinara sauce, ricotta cheese, and half of the shredded mozzarella. Mix well to ensure everything is evenly coated.
- Transfer the mixture to a 9x13 inch baking dish. Sprinkle the remaining shredded mozzarella and grated Parmesan cheese evenly over the top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown. Let rest for 5-10 minutes before serving, garnished with fresh chopped parsley.
