  1. Cook ziti pasta according to package directions until al dente; drain and set aside. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.
  3. Add minced garlic, dried oregano, and red pepper flakes (if using); cook for 1 minute until fragrant. Pour in white wine and simmer until reduced by half.
  4. Stir in crushed tomatoes and tomato paste, bring to a simmer, then reduce heat and cook for 15-20 minutes, allowing flavors to meld. Season with salt to taste.
  5. Gently fold in shrimp and scallops into the sauce; cook for just 2-3 minutes until seafood is barely opaque. Remove from heat immediately to prevent overcooking.
  6. In a large bowl, combine the cooked ziti, the seafood marinara sauce, ricotta cheese, and half of the shredded mozzarella. Mix well to ensure everything is evenly coated.
  7. Transfer the mixture to a 9x13 inch baking dish. Sprinkle the remaining shredded mozzarella and grated Parmesan cheese evenly over the top.
