👨‍🍳 Instructions

  1. Rinse glutinous rice thoroughly until water runs clear, then soak in water for at least 4 hours or overnight. Separately, soak dried shiitake mushrooms in warm water until rehydrated, then squeeze out excess water, remove stems, and slice thinly.
  2. Dice the pork belly into small cubes (about 1.5 cm) and marinate with gluten-free soy sauce and a pinch of white pepper for 15 minutes.
  3. Drain the soaked glutinous rice. In a large bowl, combine the drained rice, marinated pork, sliced shiitake mushrooms, sesame oil, and a touch of salt.
  4. Carefully stuff the bamboo stalk with the rice mixture, ensuring not to overfill, leaving about 2-3 cm space at the top. Add a little water to cover the rice, if needed.
  5. Seal the opening of the bamboo stalk with a banana leaf or aluminum foil to prevent steam from escaping. Place the filled bamboo stalk upright in a steamer.
  6. Steam for 60-90 minutes, or until the rice is tender and fully cooked. Once cooked, carefully remove the bamboo stalk from the steamer and let it cool slightly before serving.
