👨‍🍳 Instructions

  1. Rinse the dried anchovies under cold water; then, in a pot, add anchovies and 250g of water, bring to a boil and simmer for 15 minutes to make the broth. Strain out the anchovies and set the clear broth aside.
  2. While the broth simmers, sauté the minced pork with crushed garlic in a little oil until cooked through; season with a pinch of salt and pepper.
  3. In a separate pot of boiling water, cook the fresh egg noodles until al dente, usually 2-3 minutes. Remove the noodles, then blanch the green leafy vegetables for about 30 seconds in the same water.
  4. Poach an egg in the simmering anchovy broth until the whites are set and the yolk is still runny, about 2-3 minutes.
  5. To assemble, place the cooked noodles in a large bowl. Ladle the hot anchovy broth over the noodles, then arrange the minced pork, blanched vegetables, and poached egg on top. Drizzle with light soy sauce and garnish with crispy fried shallots. Serve immediately.
