Souvlaki

- Pork shoulder (lean) 150 g · 230 kcal

- Fresh dill (or mint) 2 g · 1 kcal
- White wine vinegar 5 g · 1 kcal
👨🍳 Instructions
- Cut pork shoulder into 1-inch (2.5 cm) cubes and place them in a bowl.
- Add olive oil, lemon juice, dried oregano, minced garlic, salt, and black pepper to the pork; mix well to coat, then cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- While the pork marinates, prepare the tzatziki: grate the cucumber and squeeze out excess water. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, white wine vinegar, a drizzle of olive oil, fresh dill (or mint), salt, and pepper.
- Thread the marinated pork onto skewers. Preheat a grill or grill pan to medium-high heat.
- Grill the souvlaki skewers for 8-12 minutes, turning occasionally, until cooked through and nicely charred.
- Warm the pita bread briefly on the grill or in a pan. Slice tomatoes and red onion.
- To assemble, place a souvlaki skewer on a warm pita, remove the meat, then top with a generous spoonful of tzatziki, sliced tomatoes, and red onion. Fold the pita and serve immediately.
