👨🍳 Instructions
- To prepare the beans, first soak red beans overnight. The next day, cook them with a piece of pork hock or belly, chopped onion, garlic, cumin, and salt until tender; mash some beans to thicken the sauce.
- Rinse white rice thoroughly, then cook it in water with a pinch of salt until it is fluffy and tender.
- Brown ground beef in a pan with chopped onion, garlic, bell pepper, cumin, and achiote (or paprika) until cooked through and seasoned well.
- Cut pork belly into pieces, season with salt, and render slowly until crispy and golden brown; drain excess fat.
- Peel ripe plantains and slice them diagonally. Fry in hot oil until golden brown and caramelized on both sides.
- Pan-fry or grill Colombian chorizo until cooked through and lightly browned; slice it before serving.
- Mix masarepa (pre-cooked white corn flour) with warm water and salt to form a dough. Shape into small, thick patties and cook on a griddle until golden and heated through.
- In a small pan, fry an egg sunny-side up until the whites are set and the yolk is still runny.
- On a large platter, arrange generous portions of rice, beans, ground beef, chicharrón, fried plantains, chorizo, arepa, a fried egg, and sliced avocado. Serve immediately.
