👨‍🍳 Instructions

  1. To prepare the beans, first soak red beans overnight. The next day, cook them with a piece of pork hock or belly, chopped onion, garlic, cumin, and salt until tender; mash some beans to thicken the sauce.
  2. Rinse white rice thoroughly, then cook it in water with a pinch of salt until it is fluffy and tender.
  3. Brown ground beef in a pan with chopped onion, garlic, bell pepper, cumin, and achiote (or paprika) until cooked through and seasoned well.
  4. Cut pork belly into pieces, season with salt, and render slowly until crispy and golden brown; drain excess fat.
  5. Peel ripe plantains and slice them diagonally. Fry in hot oil until golden brown and caramelized on both sides.
  6. Pan-fry or grill Colombian chorizo until cooked through and lightly browned; slice it before serving.
  7. Mix masarepa (pre-cooked white corn flour) with warm water and salt to form a dough. Shape into small, thick patties and cook on a griddle until golden and heated through.
  8. In a small pan, fry an egg sunny-side up until the whites are set and the yolk is still runny.
  9. On a large platter, arrange generous portions of rice, beans, ground beef, chicharrón, fried plantains, chorizo, arepa, a fried egg, and sliced avocado. Serve immediately.
