👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides; remove and set aside.
- Add chopped onion and minced garlic to the pot, sautéing until softened and fragrant, about 5 minutes.
- Return the browned beef to the pot, then pour in the beef broth. Bring to a boil, then reduce heat, cover, and simmer for 60 minutes.
- Add potatoes and carrots to the pot. Continue to simmer for 20 minutes.
- Stir in pumpkin, corn, and uncooked rice. Simmer for another 20 minutes, or until all vegetables are tender and rice is cooked through.
- Serve hot, garnished with fresh chopped cilantro.
