👨🍳 Instructions
- Combine finely minced lean ground beef, finely diced mirepoix (carrots, celery, onion), and stiffly beaten egg whites in a large pot. Mix all ingredients thoroughly to form the 'raft' mixture.
- Gradually whisk cold, degreased beef stock into the raft mixture. Add any desired aromatics like bay leaf or peppercorns, ensuring the raft ingredients are fully submerged.
- Place the pot over medium-low heat, stirring constantly until the 'raft' just begins to set and comes to a gentle simmer. This process forms a solid layer on top.
- Once the raft has formed, stop stirring and gently create a small 'chimney' opening in the center. This allows steam to escape and provides an access point for skimming.
- Reduce heat to very low and simmer undisturbed for 1.5 to 2 hours. Do not boil vigorously or disturb the raft, as it is clarifying the liquid below.
- Carefully ladle the crystal-clear consomme through the chimney opening, passing it through a fine-mesh sieve lined with cheesecloth. Avoid disturbing the formed raft during this process.
- Season the strained consomme with salt and pepper to taste; gently reheat if necessary before serving immediately, perhaps garnished with fresh herbs.
