  1. Slice beef flank steak against the grain into thin strips; in a bowl, combine beef with half of the olive oil, lime juice, chili powder, cumin, paprika, minced garlic, and salt and pepper to taste. Marinate for at least 20 minutes at room temperature, or up to 2 hours in the refrigerator.
  2. Meanwhile, slice bell peppers and onion into thin strips. Heat the remaining olive oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering.
  3. Add the marinated beef to the hot skillet in a single layer, ensuring not to overcrowd the pan; cook for 2-3 minutes per side until seared and slightly charred. Remove beef from skillet and set aside.
  4. Add the sliced bell peppers and onion to the same skillet; cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp and slightly caramelized. Return beef to the skillet and toss to combine.
  5. Serve the sizzling beef and vegetable mixture immediately with warm flour tortillas, allowing everyone to build their own fajitas.
