👨🍳 Instructions
- Trim scallions to match the width of your beef slices, usually about 10-12 cm (4-5 inches); blanch them quickly in boiling water for 30 seconds, then immediately immerse in ice water to stop cooking and drain well.
- Lay each beef slice flat, place a small bundle of blanched scallions at one end, and roll the beef tightly around the scallions.
- In a bowl, whisk together soy sauce, mirin, sake, and granulated sugar for the sauce; set aside.
- Heat vegetable oil in a large skillet over medium-high heat. Place the beef rolls seam-side down in the skillet and sear all sides until beautifully browned.
- Pour the prepared sauce over the beef rolls in the skillet. Reduce heat to medium-low and simmer, turning occasionally, until the sauce thickens and coats the beef rolls beautifully, about 5-7 minutes.
- Remove from heat, slice the beef rolls into 2-3 cm (1-inch) pieces, and serve immediately, optionally garnished with sesame seeds.
