  1. Cut beef shank into large pieces and sear them in cooking oil over high heat until well browned on all sides, then remove the beef from the pot.
  2. In the same pot, sauté sliced ginger, minced garlic, star anise, cinnamon stick, Sichuan peppercorns, and dried chilies for about 2 minutes until fragrant.
  3. Return the seared beef to the pot, then add Shaoxing wine, soy sauce, dark soy sauce, rock sugar, and enough water to fully submerge the beef and spices.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 2-3 hours until the beef is fork-tender. Add the daikon radish during the last 30-45 minutes of cooking.
  5. While the beef is simmering, cook the wheat noodles according to package instructions until al dente, then drain them.
  6. To serve, place a portion of cooked noodles into a bowl, ladle the rich beef broth with tender beef pieces and daikon over them, and garnish generously with fresh chopped green onions and cilantro.
