👨‍🍳 Instructions

  1. Rinse beef ribs thoroughly. In a large pot, add ribs, enough water to cover, half the onion, 3 garlic cloves, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 1-1.5 hours or until ribs are tender.
  2. Remove ribs from broth, let cool slightly, and shred meat from bones if desired. Strain the broth to remove solids, reserving the clear broth.
  3. Return the clear broth and shredded beef (or whole ribs) to the pot. Add the chopped potatoes and corn on the cob.
  4. Continue simmering for another 20-30 minutes, or until potatoes are fork-tender and corn is cooked through. Season with additional salt to taste.
  5. Serve hot, garnished generously with fresh chopped cilantro and accompanied by white rice or avocado slices, if desired.
