  1. Cut the beef sirloin into 1-inch cubes. Dice the onion, red bell pepper, and green bell pepper into similar-sized pieces; leave cherry tomatoes whole.
  2. In a large bowl, combine the beef, vegetables, olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Toss well to coat all ingredients evenly.
  3. Cover the bowl and marinate in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  4. Thread the beef and vegetables onto skewers, alternating between beef cubes, onion, bell peppers, and cherry tomatoes. Leave a small space between each piece for even cooking.
  5. Preheat your grill to medium-high heat. Grill the kebabs for 10-15 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender-crisp and slightly charred.
  6. Remove the kebabs from the grill and let them rest for a few minutes before serving. Serve hot with rice, pita bread, or a fresh salad.
