  1. Trim any fat or sinew from the beef tenderloin, then finely dice it by hand into small, uniform cubes, approximately 3-5mm.
  2. In a mixing bowl, combine the diced beef with the finely minced shallots, capers, cornichons, Dijon mustard, Worcestershire sauce, Tabasco, olive oil, and chopped parsley.
  3. Season generously with salt and freshly ground black pepper to taste, mixing thoroughly to ensure all ingredients are well combined.

  5. Create a small indentation on top of each beef tartare portion and carefully place a single egg yolk into it.
