👨🍳 Instructions
- Trim any fat or sinew from the beef tenderloin, then finely dice it by hand into small, uniform cubes, approximately 3-5mm.
- In a mixing bowl, combine the diced beef with the finely minced shallots, capers, cornichons, Dijon mustard, Worcestershire sauce, Tabasco, olive oil, and chopped parsley.
- Season generously with salt and freshly ground black pepper to taste, mixing thoroughly to ensure all ingredients are well combined.
- Form the beef mixture into a neat mound or use a ring mold on individual serving plates.
- Create a small indentation on top of each beef tartare portion and carefully place a single egg yolk into it.
- Serve immediately with toasted baguette slices or fresh potato chips (frites) on the side.
