👨‍🍳 Instructions

  1. Pat the beef dry and season generously with salt and black pepper on all sides.
  2. Heat a heavy-bottomed skillet or cast iron pan over high heat until smoking, then sear the beef for 30-60 seconds per side until a crust forms, leaving the center rare.
  3. Immediately transfer the seared beef to an ice bath for 1-2 minutes to stop the cooking, then pat it completely dry and chill in the refrigerator for at least 15 minutes.
  4. While the beef chills, prepare the tataki sauce: whisk together soy sauce, rice vinegar, mirin, grated ginger, minced garlic, and sesame oil in a small bowl.
  5. Once chilled, slice the beef very thinly against the grain, about 2-3mm thick, using a sharp knife.
  6. Arrange the sliced beef on a serving platter, drizzle generously with the prepared tataki sauce, and garnish with sliced scallions and toasted sesame seeds.
