  1. Pat the whole chicken dry with paper towels; this helps create crispy skin. In a small bowl, combine smoked paprika, garlic powder, onion powder, chili powder, ground cumin, black pepper, brown sugar, and salt to make the rub.
  2. Rub the chicken all over with olive oil, then generously apply the prepared spice rub, ensuring it covers all surfaces, including under the skin if possible.
  3. Open the beer can and pour out about 1/4 of the beer (you can drink it or discard it). Place the chicken upright onto the beer can, inserting the can into the chicken's cavity.
  4. Preheat your grill or oven to 190°C (375°F). Place the chicken, standing on the beer can, directly on the grill grates or in a roasting pan in the oven.
  5. Cook for 1.5 to 2 hours, or until the internal temperature of the thickest part of the thigh reaches 74°C (165°F). The skin should be deeply golden brown and crispy.
  6. Carefully remove the chicken from the grill or oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring a tender and flavorful result.
