👨🍳 Instructions
- Heat olive oil in a large Dutch oven or pot over medium heat. Add diced onion and bell pepper, cooking until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant. Push vegetables to one side, then add ground bison to the other side and brown it, breaking it apart with a spoon.
- Once bison is browned, drain any excess fat. Stir in chili powder, cumin, dried oregano, smoked paprika, and cayenne pepper, cooking for 1 minute until fragrant.
- Pour in crushed tomatoes and beef broth. Add drained kidney and pinto beans, stirring to combine all ingredients well.
- Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 60-75 minutes, stirring occasionally, to allow flavors to meld.
- Taste and adjust seasoning if needed, adding salt and a pinch of sugar to balance the flavors. Serve hot, garnished with your favorite toppings like shredded cheese, sour cream, or fresh cilantro.
