👨🍳 Instructions
- Slice the beef against the grain into thin strips and marinate with a tablespoon of soy sauce, half a tablespoon of cornstarch, and a dash of cooking oil for 15 minutes.
- Prepare the sauce by mixing remaining soy sauce, oyster sauce, water, a teaspoon of sugar, and half a tablespoon of cornstarch in a small bowl.
- Heat a wok or large skillet over high heat with some cooking oil. Add the marinated beef in a single layer and sear quickly until browned, then remove from the wok.
- Add a little more oil to the wok if needed, then sauté minced garlic and ginger until fragrant, about 30 seconds.
- Add sliced bell peppers and onion to the wok and stir-fry for 2-3 minutes until slightly tender-crisp.
- Return the seared beef to the wok. Pour in the prepared sauce and bring to a simmer, stirring continuously until the sauce thickens.
- Stir in the freshly ground black pepper generously, adjust seasoning with salt if desired, then serve immediately.
