- Black Glutinous Rice 50 g · 175 kcal
- Coconut Milk 140 g · 238 kcal
- Palm Sugar 25 g · 95 kcal

- Pandan Leaf 5 g · 0 kcal
👨🍳 Instructions
- Rinse the black glutinous rice thoroughly under cold water until the water runs clear; then soak the rice in fresh water for at least 4 hours, or preferably overnight.
- Drain the soaked rice and transfer it to a medium saucepan with 220ml of fresh water and the pandan leaf (tied in a knot). Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the rice is tender and most of the water has been absorbed.
- Stir in the palm sugar and 70g of coconut milk into the rice. Continue to cook, stirring occasionally, for another 10-15 minutes, until the pudding thickens to your desired consistency. Remove the pandan leaf.
- To serve, ladle the warm black rice pudding into bowls. Drizzle each serving with the remaining 70g of coconut milk, and optionally garnish with fresh fruit or toasted coconut flakes.
