  • Black Glutinous Rice 50 g · 175 kcal
  • Coconut Milk 140 g · 238 kcal
  • Palm Sugar 25 g · 95 kcal

  • Pandan Leaf 5 g · 0 kcal

👨‍🍳 Instructions

  1. Rinse the black glutinous rice thoroughly under cold water until the water runs clear; then soak the rice in fresh water for at least 4 hours, or preferably overnight.
  2. Drain the soaked rice and transfer it to a medium saucepan with 220ml of fresh water and the pandan leaf (tied in a knot). Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the rice is tender and most of the water has been absorbed.
  3. Stir in the palm sugar and 70g of coconut milk into the rice. Continue to cook, stirring occasionally, for another 10-15 minutes, until the pudding thickens to your desired consistency. Remove the pandan leaf.
  4. To serve, ladle the warm black rice pudding into bowls. Drizzle each serving with the remaining 70g of coconut milk, and optionally garnish with fresh fruit or toasted coconut flakes.
