👨🍳 Instructions
- Prepare the beef by trimming excess fat and cutting into large, uniform pieces. Rinse the carrots, onion, and celery, then peel and coarsely chop them.
- Place the beef in a large pot and cover with fresh cold water. Bring to a boil, then skim off any foam that rises to the surface.
- Add the chopped carrots, onion, celery, black peppercorns, and bay leaf to the pot. Season generously with salt.
- Reduce the heat to low, cover the pot, and simmer gently for 1.5 to 2 hours, or until the beef is very tender.
- Remove the bay leaf and peppercorns (if desired). Slice the beef against the grain and serve hot with the boiled carrots and a ladle of the flavorful broth.
