👨🍳 Instructions
- Season the beef chuck roast generously with salt and pepper. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
- Sear the beef on all sides until deeply browned, then remove it from the pot. Add diced onion, carrot, and bell pepper to the pot and sauté until softened, about 5-7 minutes.
- Return the beef to the pot, pour in beef broth, ensuring the meat is mostly submerged. Bring to a simmer, then cover and transfer to a preheated oven at 160°C (325°F) for 3 hours, or until very tender.
- Once cooked, remove the beef from the pot and shred it using two forks. Mix the shredded beef with a small amount of the braising liquid to keep it moist.
- Warm the wheat tortilla slightly in a dry pan or microwave until pliable. Spread a layer of creamy sauce evenly over the tortilla.
- Place a generous portion of shredded braised beef in the center of the tortilla. Top with shredded lettuce and diced tomato.
- Fold in the sides of the tortilla, then tightly roll it up from the bottom to create a secure wrap. Serve immediately and enjoy!
