  1. Season the beef chuck roast generously with salt and pepper. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
  2. Sear the beef on all sides until deeply browned, then remove it from the pot. Add diced onion, carrot, and bell pepper to the pot and sauté until softened, about 5-7 minutes.
  3. Return the beef to the pot, pour in beef broth, ensuring the meat is mostly submerged. Bring to a simmer, then cover and transfer to a preheated oven at 160°C (325°F) for 3 hours, or until very tender.
  4. Once cooked, remove the beef from the pot and shred it using two forks. Mix the shredded beef with a small amount of the braising liquid to keep it moist.
  5. Warm the wheat tortilla slightly in a dry pan or microwave until pliable. Spread a layer of creamy sauce evenly over the tortilla.
  6. Place a generous portion of shredded braised beef in the center of the tortilla. Top with shredded lettuce and diced tomato.
  7. Fold in the sides of the tortilla, then tightly roll it up from the bottom to create a secure wrap. Serve immediately and enjoy!
