  2. Place the chicken in a large stockpot and add roughly 3-4 liters of cold water, ensuring the chicken is fully submerged.
  3. Roughly chop the carrots, celery, and onion into large pieces. Add them to the pot along with 1-2 bay leaves and a few black peppercorns.
  4. Bring the water to a gentle boil over medium-high heat, then immediately reduce heat to low, ensuring it maintains a bare simmer.
  5. Skim off any foam or impurities that rise to the surface using a ladle or spoon. Simmer gently, partially covered, for at least 2 hours, or up to 4 hours for deeper flavor.
  6. Carefully strain the broth through a fine-mesh sieve lined with cheesecloth into a clean pot or heatproof container. Discard the solids.
