Bulgur Pilaf

👨🍳 Instructions
- Heat olive oil in a large pot or deep skillet over medium heat, then add the diced onion and sauté until it softens and becomes translucent, about 5-7 minutes.
- Add the diced green bell pepper and cook for another 3-5 minutes until it starts to soften.
- Stir in the tomato paste and cook for 1 minute, stirring constantly, to deepen its flavor.
- Add the diced fresh tomatoes, season with salt and pepper, and cook until the tomatoes soften and release their juices, about 5 minutes.
- Rinse the bulgur under cold water and drain thoroughly, then add it to the pot and stir well to combine with the vegetables.
- Pour in the hot water or vegetable broth, bring to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the bulgur absorbs all the liquid.
- Remove the pot from the heat and let it rest, covered, for another 5-10 minutes to allow the bulgur to steam and become fluffy, then fluff with a fork before serving.
