- Chicken breast 100 g · 165 kcal

👨🍳 Instructions
- Place chicken breast in a large pot, cover with about 1.5-2 liters of water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 30-40 minutes until chicken is cooked through.
- Remove chicken from the pot, shred it into small pieces, and set aside. Strain the broth through a fine-mesh sieve back into the clean pot, discarding any impurities.
- In the same clean pot, heat the olive oil over medium heat. Add finely diced onion and carrot, sautéing until softened, about 5-7 minutes.
- Pour the strained chicken broth back into the pot with the sautéed vegetables. Bring to a boil, then add the uncooked white rice. Reduce heat and simmer for 15-20 minutes until the rice is tender.
- Add the shredded chicken back to the soup and heat through. Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished generously with fresh mint leaves for an authentic Portuguese flavor.
