👨‍🍳 Instructions

  1. Place chicken breast in a large pot, cover with about 1.5-2 liters of water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 30-40 minutes until chicken is cooked through.
  2. Remove chicken from the pot, shred it into small pieces, and set aside. Strain the broth through a fine-mesh sieve back into the clean pot, discarding any impurities.
  3. In the same clean pot, heat the olive oil over medium heat. Add finely diced onion and carrot, sautéing until softened, about 5-7 minutes.
  4. Pour the strained chicken broth back into the pot with the sautéed vegetables. Bring to a boil, then add the uncooked white rice. Reduce heat and simmer for 15-20 minutes until the rice is tender.
  5. Add the shredded chicken back to the soup and heat through. Taste and adjust seasoning with salt and pepper as needed.
  6. Serve hot, garnished generously with fresh mint leaves for an authentic Portuguese flavor.
