👨🍳 Instructions
- Sear the beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the flank steak on all sides until deeply browned, about 3-4 minutes per side.
- Sauté aromatics: Remove the beef and set aside. Add onions and bell peppers to the pot, cooking until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
- Build the sauce: Stir in tomato paste, crushed tomatoes, cumin, dried oregano, and bay leaves. Return the seared beef to the pot.
- Simmer the beef: Pour in beef broth until the meat is almost covered. Bring to a simmer, then reduce heat to low, cover, and cook for 2-3 hours or until the beef is fork-tender.
- Shred the beef: Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot.
- Finish the sauce: Continue to simmer, uncovered, for another 30-60 minutes, stirring occasionally, allowing the sauce to reduce and thicken to your desired consistency. Season with salt and pepper to taste.
