👨🍳 Instructions
- Cook the white rice according to package instructions; typically, combine 1 cup rice with 2 cups water and a pinch of salt, bring to a boil, then simmer until water is absorbed and rice is tender.
- In a separate pot, heat the cooked black beans with a little water or broth until warmed through; season to taste with a pinch of salt if needed.
- Season the chicken breast with salt and pepper. Grill or pan-fry the chicken breast in a tablespoon of vegetable oil until cooked through and golden brown, about 5-7 minutes per side.
- Peel and slice the ripe plantain into thick diagonal pieces. Heat the remaining vegetable oil in a pan over medium-high heat and fry the plantain slices until golden brown and caramelized on both sides.
