👨‍🍳 Instructions

  1. Cook the white rice according to package instructions; typically, combine 1 cup rice with 2 cups water and a pinch of salt, bring to a boil, then simmer until water is absorbed and rice is tender.
  2. In a separate pot, heat the cooked black beans with a little water or broth until warmed through; season to taste with a pinch of salt if needed.
  3. Season the chicken breast with salt and pepper. Grill or pan-fry the chicken breast in a tablespoon of vegetable oil until cooked through and golden brown, about 5-7 minutes per side.
  4. Peel and slice the ripe plantain into thick diagonal pieces. Heat the remaining vegetable oil in a pan over medium-high heat and fry the plantain slices until golden brown and caramelized on both sides.
  5. Wash and chop the lettuce, tomato, and cucumber for the salad. Dress the salad simply with a squeeze of fresh lime juice.
  6. To assemble the Casado, place a generous serving of white rice on one side of a large plate, followed by black beans next to it. Arrange the grilled chicken breast, fried plantains, and fresh salad on the remaining space.
