👨🍳 Instructions
- Rinse the jasmine rice thoroughly, then soak it in cold water for at least 30 minutes. Drain the soaked rice.
- Dice the century egg into small pieces and set aside. Thinly slice the ginger and finely chop the green onions.
- In a large pot, combine the soaked rice and 200g of water or broth. Bring to a boil, then reduce heat to low.
- Add the sliced ginger and shredded pork to the pot. Simmer for 60-75 minutes, stirring occasionally to prevent sticking, until the rice has broken down into a creamy porridge.
- Stir in the diced century egg, season with salt and white pepper to taste. Continue to cook for another 5 minutes.
- Serve the congee hot, garnished with fresh green onions and a drizzle of sesame oil.
