👨‍🍳 Instructions

  1. Rinse the jasmine rice thoroughly, then soak it in cold water for at least 30 minutes. Drain the soaked rice.
  2. Dice the century egg into small pieces and set aside. Thinly slice the ginger and finely chop the green onions.
  3. In a large pot, combine the soaked rice and 200g of water or broth. Bring to a boil, then reduce heat to low.
  4. Add the sliced ginger and shredded pork to the pot. Simmer for 60-75 minutes, stirring occasionally to prevent sticking, until the rice has broken down into a creamy porridge.
  5. Stir in the diced century egg, season with salt and white pepper to taste. Continue to cook for another 5 minutes.
  6. Serve the congee hot, garnished with fresh green onions and a drizzle of sesame oil.
