- Chicken Thighs (bone-in, skin-on) 300 g · 540 kcal

👨🍳 Instructions
- Cut chicken thighs into large pieces, pat dry, and season with salt and pepper.
- Heat vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat, then sear chicken pieces until golden brown on all sides; remove chicken and set aside.
- In the same pot, add sliced onions and cook until softened and translucent, about 5-7 minutes.
- Add chopped red bell pepper and cook for another 5 minutes, then stir in minced garlic and cook for 1 minute until fragrant.
- Add chopped tomatoes, stir well, and cook for about 10-15 minutes, crushing them with a spoon, until they break down into a sauce.
- Return the chicken to the pot, add khmeli suneli, utskho suneli, red pepper flakes (if using), and remaining salt and pepper.
- Stir everything well, bring to a gentle simmer, then cover and cook on low heat for 45-60 minutes, or until chicken is very tender.
- Before serving, stir in freshly chopped cilantro, parsley, and basil.
