Chicken Banh Mi

- Boneless, Skinless Chicken Breast 120 g · 200 kcal
- Daikon Radish 25 g · 4 kcal

👨🍳 Instructions
- First, prepare the pickled vegetables. Julienne the daikon and carrot. In a bowl, sprinkle with a pinch of salt, let sit for 10 minutes, then rinse and squeeze out excess water.
- In a separate small bowl, combine the white vinegar, 5g granulated sugar, and 2 tablespoons of water. Pour this pickling liquid over the daikon and carrot, and let it marinate for at least 20 minutes.
- For the chicken, thinly slice the breast. Mince garlic and ginger. In a bowl, combine the chicken with minced garlic, minced ginger, 5g granulated sugar, 5g fish sauce, and 5g light soy sauce. Marinate for at least 15 minutes.
- Heat a pan or grill over medium-high heat. Cook the marinated chicken slices for 3-4 minutes per side, or until fully cooked through and slightly charred.
- Slice the baguette horizontally, but not all the way through, creating a pocket. Spread mayonnaise generously on both cut sides of the baguette.
- Arrange the cooked chicken slices inside the baguette. Top with the drained pickled daikon and carrot, fresh cucumber slices, cilantro sprigs, and jalapeño slices (if using).
