  1. Cut chicken thighs into bite-sized pieces and set aside. Finely chop the onions and green chilies.
  2. Heat vegetable oil in a heavy-bottomed pan or karahi over medium-high heat. Add the chopped onions and cook until deeply golden brown, stirring frequently, which takes about 10-15 minutes.
  3. Add the ginger-garlic paste and green chilies, then cook for 2-3 minutes until fragrant.
  4. Stir in ground cumin, ground coriander, turmeric powder, and red chili powder. Cook for 1 minute, adding a splash of water if the spices stick.
  5. Add the chopped chicken to the pan and cook for 5-7 minutes, stirring occasionally, until it changes color and is lightly browned on all sides.
  6. Pour in the canned chopped tomatoes and salt. Mix well, then cover the pan and simmer on low heat for 20-25 minutes, stirring occasionally, until the chicken is tender and the oil separates from the masala.
  7. Finally, stir in the garam masala. Serve hot with rice or naan bread.
