- Chicken thighs, boneless, skinless 100 g · 170 kcal

👨🍳 Instructions
- Cut chicken thighs into bite-sized pieces and set aside. Finely chop the onions and green chilies.
- Heat vegetable oil in a heavy-bottomed pan or karahi over medium-high heat. Add the chopped onions and cook until deeply golden brown, stirring frequently, which takes about 10-15 minutes.
- Add the ginger-garlic paste and green chilies, then cook for 2-3 minutes until fragrant.
- Stir in ground cumin, ground coriander, turmeric powder, and red chili powder. Cook for 1 minute, adding a splash of water if the spices stick.
- Add the chopped chicken to the pan and cook for 5-7 minutes, stirring occasionally, until it changes color and is lightly browned on all sides.
- Pour in the canned chopped tomatoes and salt. Mix well, then cover the pan and simmer on low heat for 20-25 minutes, stirring occasionally, until the chicken is tender and the oil separates from the masala.
- Finally, stir in the garam masala. Serve hot with rice or naan bread.
