  1. Season chicken breast with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat, then cook chicken until browned and cooked through, about 5-7 minutes per side.
  2. Remove chicken, shred or dice, and set aside. In the same skillet, briefly sauté diced onion and bell pepper until slightly softened, about 3-5 minutes.
