👨🍳 Instructions
- Preheat oven to 190°C (375°F). In a large skillet, heat olive oil over medium heat and sauté chopped onion until softened, about 5-7 minutes. Add minced garlic, chili powder, cumin, and oregano; cook for 1 minute until fragrant.
- Stir in tomato paste and chicken broth, bringing the mixture to a simmer. Reduce heat to low and cook for 10-15 minutes, allowing the sauce to thicken slightly. Season with salt to taste and set aside.
- Lightly grease a 9x13 inch baking dish. Warm corn tortillas briefly to make them pliable (e.g., microwave for 15-20 seconds or quickly dip in the sauce). Dip each tortilla into the prepared enchilada sauce to coat both sides.
- Place a portion of shredded chicken and a sprinkle of cheese down the center of each coated tortilla. Roll up each tortilla tightly and place seam-side down in the prepared baking dish.
- Pour any remaining enchilada sauce over the rolled enchiladas and top generously with the remaining shredded cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
