Chicken Fricassee

- Boneless, Skinless Chicken Thigh 150 g · 248 kcal
- Unsalted Butter 10 g · 72 kcal

👨🍳 Instructions
- Season chicken thighs with salt and pepper. In a large pot or Dutch oven, melt half the butter over medium-high heat.
- Brown the chicken on all sides for about 5-7 minutes, then remove it from the pot and set aside.
- Add the remaining butter to the pot, then add chopped onion and mushrooms. Sauté until the onion is softened and mushrooms are golden, about 5-7 minutes.
- Sprinkle flour over the vegetables and stir for 1 minute to create a roux. Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the pot.
- Return the chicken to the pot, bring the sauce to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes until chicken is cooked through.
- Stir in the heavy cream and lemon juice, then heat gently for 2-3 minutes without boiling. Taste and adjust seasoning as needed.
- Garnish with fresh parsley before serving. Serve hot, traditionally with rice or noodles.
