👨‍🍳 Instructions

  1. Cut chicken thighs into bite-sized pieces; dice potatoes, carrots, bell peppers, and chop onion and garlic.
  2. Heat cooking oil in a large pot or Dutch oven over medium heat; sauté garlic and onion until fragrant.
  3. Add chicken pieces and brown them on all sides; then stir in the tomato sauce, soy sauce, and vinegar.
  4. Pour in water or broth, add bay leaf, and bring to a simmer; cover and cook for 15 minutes.
