👨🍳 Instructions
- Slice chicken thighs into thin strips and marinate for at least 30 minutes (or overnight) in a bowl with 1 tbsp olive oil, 1 tbsp lemon juice, 1 clove minced garlic, 1 tsp dried oregano, salt, and pepper.
- Prepare tzatziki: grate the cucumber and squeeze out excess water. Mix grated cucumber with Greek yogurt, 1 clove minced garlic, 1 tbsp lemon juice, fresh dill, 1 tsp olive oil, salt, and pepper.
- Chop tomatoes and red onion into small pieces. Heat a skillet or grill pan over medium-high heat with a little olive oil.
- Cook the marinated chicken strips in the hot pan for 5-7 minutes, stirring occasionally, until fully cooked through and slightly browned.
- Lightly warm the pita bread in a separate dry skillet or microwave. Place a warm pita on a flat surface.
- Spread a generous amount of tzatziki on the warm pita, then layer with cooked chicken, chopped tomatoes, and red onion.
- Fold or roll the pita tightly to create your chicken gyro. Serve immediately and enjoy!
