👨‍🍳 Instructions

  1. Slice chicken thighs into thin strips and marinate for at least 30 minutes (or overnight) in a bowl with 1 tbsp olive oil, 1 tbsp lemon juice, 1 clove minced garlic, 1 tsp dried oregano, salt, and pepper.
  2. Prepare tzatziki: grate the cucumber and squeeze out excess water. Mix grated cucumber with Greek yogurt, 1 clove minced garlic, 1 tbsp lemon juice, fresh dill, 1 tsp olive oil, salt, and pepper.
  3. Chop tomatoes and red onion into small pieces. Heat a skillet or grill pan over medium-high heat with a little olive oil.
  4. Cook the marinated chicken strips in the hot pan for 5-7 minutes, stirring occasionally, until fully cooked through and slightly browned.
  5. Lightly warm the pita bread in a separate dry skillet or microwave. Place a warm pita on a flat surface.
  6. Spread a generous amount of tzatziki on the warm pita, then layer with cooked chicken, chopped tomatoes, and red onion.
  7. Fold or roll the pita tightly to create your chicken gyro. Serve immediately and enjoy!
