👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, celery, and chicken breast pieces; sauté until chicken is lightly browned and vegetables soften, about 5-7 minutes.
- Stir in the fresh cilantro, parsley, grated ginger, turmeric, cinnamon, and black pepper. Cook for another minute until fragrant, then add the crushed tomatoes and tomato paste, mixing well.
- Add the brown lentils, chickpeas, and enough hot water or chicken broth to cover all ingredients generously. Bring to a boil, then reduce heat, cover, and simmer for at least 45-60 minutes, or until lentils are tender.
- In the last 10 minutes of cooking, stir in the vermicelli and lemon juice. Continue to simmer until the vermicelli is cooked through.
- Taste and adjust seasoning with salt and pepper as needed. Serve hot, traditionally garnished with extra fresh cilantro and a lemon wedge.
