👨🍳 Instructions
- Cut chicken breast into 1-inch (2.5 cm) cubes. In a large bowl, combine yogurt, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, smoked paprika, black pepper, and half of the olive oil. Add the chicken cubes to the marinade, mix well to coat, and refrigerate for at least 30 minutes, or up to 4 hours.
- While chicken marinates, cut the red bell pepper and red onion into similar 1-inch (2.5 cm) pieces. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat your grill to medium-high heat (about 200-220°C / 400-425°F) or a grill pan on the stovetop. Lightly brush the grill grates or pan with the remaining olive oil.
- Thread the marinated chicken cubes, red bell pepper, and red onion pieces alternately onto the skewers. Discard any remaining marinade.
- Place the kebabs on the preheated grill or grill pan. Cook for 15-20 minutes, turning occasionally, until the chicken is cooked through and lightly charred on all sides. The internal temperature of the chicken should reach 74°C (165°F).
- Remove from heat and let rest for a few minutes before serving. Serve hot with rice, flatbread, or a fresh salad.
