Chicken Lo Mein

👨🍳 Instructions
- Slice chicken breast into thin strips; in a bowl, combine chicken with a portion of soy sauce, a dash of sesame oil, and cornstarch, then set aside to marinate for 10-15 minutes.
- Boil lo mein noodles according to package directions until al dente; drain, rinse with cold water to prevent sticking, and toss with a little vegetable oil.
- In a small bowl, whisk together remaining soy sauce, oyster sauce, brown sugar, and a splash of water or chicken broth, then set aside.
- Heat vegetable oil in a large wok or skillet over high heat; add minced ginger and garlic, then add julienned carrots, shredded cabbage, and sliced bell pepper, stir-frying until crisp-tender, about 3-4 minutes.
- Push vegetables to one side of the wok; add marinated chicken to the empty side and stir-fry until cooked through and lightly browned, about 5-7 minutes.
- Add the cooked noodles and the prepared sauce to the wok with the chicken and vegetables; toss everything together vigorously for 1-2 minutes until thoroughly combined and coated with the sauce.
- Stir in chopped green onions just before serving; serve hot and enjoy immediately.
