👨‍🍳 Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, egg, half of the Parmesan cheese, minced garlic, finely diced onion, dried oregano, 1/2 tsp salt, and 1/4 tsp black pepper. Mix gently until just combined.
  2. Form the mixture into golf ball-sized meatballs. You should get about 12-15 meatballs. Heat 1 tbsp olive oil in a large non-stick skillet over medium-high heat.
  3. Sear the meatballs on all sides until browned, about 5-7 minutes. They don't need to be fully cooked through yet.
  4. Pour the marinara sauce into the skillet, coating the meatballs. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through and tender.
  5. While the meatballs are simmering, slice the sub rolls lengthwise, being careful not to cut all the way through. Briefly toast the rolls in a toaster oven or under the broiler for 1-2 minutes until lightly golden.
  6. Spoon several chicken meatballs and plenty of marinara sauce into each toasted sub roll. Top generously with shredded mozzarella cheese and the remaining Parmesan.
  7. Place the assembled subs back into the toaster oven or under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning.
  8. Garnish with fresh basil leaves, if desired, and serve immediately. Enjoy your homemade Chicken Meatball Sub!
