Chicken Meatball Sub

- Ground Chicken (lean) 200 g · 260 kcal
- Breadcrumbs 30 g · 110 kcal
- Large Egg 25 g · 35 kcal
- Parmesan Cheese 20 g · 78 kcal
- Garlic, minced 5 g · 7 kcal
- Onion, finely diced 20 g · 8 kcal
- Dried Oregano 1 g · 3 kcal
- Marinara Sauce 150 g · 75 kcal
- Sub Roll (Hoagie Roll) 100 g · 260 kcal
- Mozzarella Cheese, shredded 60 g · 180 kcal
- Fresh Basil leaves 2 g · 0 kcal
👨🍳 Instructions
- In a large bowl, combine ground chicken, breadcrumbs, egg, half of the Parmesan cheese, minced garlic, finely diced onion, dried oregano, 1/2 tsp salt, and 1/4 tsp black pepper. Mix gently until just combined.
- Form the mixture into golf ball-sized meatballs. You should get about 12-15 meatballs. Heat 1 tbsp olive oil in a large non-stick skillet over medium-high heat.
- Sear the meatballs on all sides until browned, about 5-7 minutes. They don't need to be fully cooked through yet.
- Pour the marinara sauce into the skillet, coating the meatballs. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through and tender.
- While the meatballs are simmering, slice the sub rolls lengthwise, being careful not to cut all the way through. Briefly toast the rolls in a toaster oven or under the broiler for 1-2 minutes until lightly golden.
- Spoon several chicken meatballs and plenty of marinara sauce into each toasted sub roll. Top generously with shredded mozzarella cheese and the remaining Parmesan.
- Place the assembled subs back into the toaster oven or under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning.
